How to play Custom Minecraft Maps?

So whenever I used to want to play a parkour map on my Hamachi server I would just swtich the MONSTERS to spawn off. And they Wouldn't ruin the map. No wI switch Spawn Monsters to off and Restart the WOrld and they are still there. Anyone know how to make them not spawn? Thanks!
