How to disable keyboard shortcuts?

Is there any way to disable certain keyboard shortcuts? The reason I want to is that when I press control (ctrl) and escape (esc) together, it brings up the start menu. This is annoying because when I am playing minecraft, I have sprint set to ctrl and menu set to esc as default and if I'm running and want to open the menu, I press ctrl and esc, obviously, which then causes the start menu to come up causing minecraft to be minimised (Become one of the windows in the background so I can't see it). This is extremely annoying and has happened to me numerous times whilst playing online. Is there any way to disable this shortcut?
